Choosing .coffee once the short .com has gone
If you are naming a roastery today, the short .com went a long time ago and the .co.uk usually went with it. That is the situation this extension is built for. Put the brand in front and the four letters after the dot finish the phrase: the name says who you are, the extension says what you sell, and the whole address is short enough to print on a cup without shrinking the type.

It shares its rules with a large portfolio: the same Acceptable Use Policy, the same abuse reporting, and the same reserved names practice, which holds back certain premium names and lets the registry change that list from time to time. What a .coffee domain will not do is help you locally. Google's documentation describes generic top-level domains as domains that are not associated with specific locations, so this one hands Google nothing about where you are.
